Default Easy Tomato Soup

Just tried this today-very tasty on a cold day.

1 12 or 15 oz. can diced tomatoes with basil,oregano
1 Tablespoon cream cheese


Boil the diced tomatoes for about 5 minutes until soft. Remove from stove top-I used a potato masher to crush the tomatoes further-add cream cheese and stir well. The cream cheese will thicken the tomato. May add more or less cream cheese depending on taste/thickness desired. This was good-it could also be a base for other soups,etc.

That does sound good. I love making soup, but we usually use the crockpot and let it simmer for a day or so.

We have a nice ham bone left over from Easter. I can't wait to turn it into soup! Maybe some split pea, or a 15 bean soup.
