Default winterizing

At what temperature is it essential to winterize?

Anytime any of the plumbing will be below 32F you should winterize. Anything else and you're taking a risk.

I've been okay with a bit cooler with the heat on in the camper, the undersink cabinets open (so they stay warm) and the bathroom door open, while not allowing water to accumulate in the gray tank (note that the drain valves will freeze closed!). But I wouldn't want to leave it unheated even at 30F with water in any of the plumbing.

It depends on whether you mean to winterize before dead storage, or to winterize so that you can continue to use it in freezing weather. Details and opinions are plentiful, and differ according to the specific question.

This topic comes up every year. You will learn a lot by doing a Search on the word "winterize", probably concentrating on the Plumbing forum. For some people, the term "winterize" includes adding a water heater bypass, so you will find more by searching on "bypass".
