Default Winterizing

When winterizing, after you drain,
which valves do you leave open and which do you close?
From a native Floridian who knows nothing about wintering anything.

Assuming you are expecting freezing weather ...

Leave all valves and faucets open for the winter. Don't forget to remove the shower head from the hose, shake it out dry, and leave it off the hose. Do the same for the outside shower, and leave it turned on. Once the fresh water tank is drained, no need to worry about the last inch of water in the bottom. After draining everything, run the pump for about 5 seconds to purge water from the pumping chamber.
