Default 'Taters, carrots & onions

Cube two baking potatoes into 3/4" pieces. Slice three carrots into 1/4" pieces. Halve one large onion crosswise, then cut each half into big pieces. Mix the vegetables together, being sure the onion pieces are separated. Lay the mix onto a long piece of aluminum foil approximately 12" deep. Add a half stick of butter into 1/4 pieces and spaced throughout the mix. Salt and pepper generously. Fold the foil over a few times to make an airtight (and liquid tight) shaped in a long roll. Put it on the grill, somewhere near the edge where the heat isn't as high, and then cook whatever main course you want. Check the roll after about 20 minutes. You can leave it a long time with no obvious deterioration.

It's an old girl scout recipe (so I'm told by an old girl scout) but it's delicious, easy, dependable and will last for as many meals as you want to eat it.
