That area is a sizable area for storage in a camper.

Awesome project. We had a TM where the oven was, they installed a convention/microwave oven. Had a solid laminate counter top. You could just install a board level at the top and just glue down a piece of laminate. Rework the whole thing so it all matches. Or install a butcher block style wood, and use it as a cutting block. If it was me. I would mount a microwave in the below cabinet space and install a electric induction cook top. Re-laminate the whole counter top with something newer. Good luck with your project.
