Default Sausage!

I suppose there are 1000 recipes for homemade sausage out there. Here's another.

To me, sausage should be
1. Easy to make - I'm not willing to stand around with a meat grinder and dozens of odd spices.
2. VERY flavorful - no bland sausage need apply.
3. VERY low fat - no Jimmy Dean, swimming in grease.

Last week while we were camping at Tortilla Flat, AZ, my wife brought out an old favorite. It has only two ingredients.
  • 1 pound of very low fat ground pork (we find 90% lean in our local Safeway)
  • 1 T Penzy's Venison Sausage Seasoning (www.penzys.com) - or a bit more for extra flavor.
That's it. Before we leave home, we mix it up in a bowl, then make it into patties, wrap them in plastic wrap so they are easy to separate, and freeze.

I know, the seasoning says "Venison", and we don't have venison, but the taste is just right. I'll admit, my wife adds a bit of powdered red chili pepper just for me, but many people won't want it.

The patties can be fried as is for breakfast, but because it is so low in fat, a spray of PAM in the frying pan or grill is a good idea. It can also be crumbled on pizza, chunked into spaghetti sauce, or most anything you can think of, and it contributes almost no fat to the total calorie count.
