We have stayed at Fred Gannon Rocky Bayou (weird name) and Manatee Springs State Parks in the past. Both were nice and would merit a revisit if I were passing through again. From Fred Gannon you can visit (among other things) the aircraft museum at Eglin AFB which was well worth a look if you like that sort of thing.
