You've done a lot of nice work!
I see you still have some of the original lighting. I replaced some of my lights with some Koree 12V LED lights:

The switch had 1 off and 2 on positions, but the 2 on positions were wired to work the same way. So, I wired in a resistor for one of the positions so now we have a "night" light.
My only issue is glare. A lot of new LED lighting uses no diffuser so they can be glarey. I don't have a good solution for that issue yet.
