The switch had 1 off and 2 on positions, but the 2 on positions were wired to work the same way. So, I wired in a resistor for one of the positions so now we have a "night" light.

My only issue is glare. A lot of new LED lighting uses no diffuser so they can be glarey. I don't have a good solution for that issue yet.
I just changed out the fluorescent with a new LED units but the original fixtures I just put led warm white bulbs in.
Maybe some window sunscreen might work for the glare
