In the 2720SL, the fresh water tank is under the kitchen sink. To put a drain in the tank, the factory simply put a threaded hole in the side of the tank near the bottom, and screwed an elbow into it, with a piece of tubing connected to the other side of the elbow that goes through the floor. In my TM, the hole in the floor through which the tubing goes is a bit too close to the tank, and so the tank compresses the tubing maybe half way. This reduces the drain rate out of the tank significantly, though it does drain. But, if the tank shifted slightly, I could see that the tubing could be completely closed off (though that has never happened to me).
I would check that. Since the fresh tank is vented, having open faucets shouldn't affect draining the fresh water tank, just the plumbing and hot water heater.
