Default Changing the door knob and deadbolt

I changed the door knob and dead bolt with a house set from home depot. I can't get them to latch if the strike plates are on. With the strike plates on the door frame side off they work. With them on they don't go far enough to latch. I didn't change the hole locations or anything. Anyone have ideas before I take a Dremel to the strike plates?

I also changed my locks to the house type. Had to add a plate on the inside and I didn't reinstall one of the striker plates due to the same reason. In looking at the dead bolt hole, I figured as long as I didn't force opening or closing the latch it would work as is. It's been a couple of years and no issues so far.
