You are correct. The existing thermostat has an off position. I believe some of the much older ones have an off switch, the newer ones when turned all the way down ( will click) puts it in the off position.

With any device that uses batteries, flashlight, camera, or the digital thermostat remove the batteries for long term storage to prevent corrosion problems. If you in a climate with high humidity remove if its going to not in use longer than maybe a month.
