You're correct - the bed slides in but doesn't drop down. However, it would be rather difficult to "delete" the dinette. On the 2720, under one of the benches you have the fresh water tank and pump and under the other is the furnace. I'm not sure what the arrangement is on the 3023 although I'm pretty sure the water tank is under the "couch/bed". They do sell a 2619 Sport that is basically stripped - no bathroom, no refrigerator, no stove, etc. Maybe that's what you need - then you can set it up the way you want it.
